Ellen and Mandy’s Apple, Carrot and Nut Muffins!

There’s something special about a home filled with the smell of freshly baked treats which resident bakers Ellen and Mandy bring to the kitchen with their delicious apple, carrot and nut muffins.

The girls enjoy cooking together and turning ordinary afternoons into ones full of laughter and tasty treats.

Safe to say, the muffins don’t last long when they come out of the oven.

Ingredients

  • 2 cups wholemeal self-raising flour
  • 1 tsp cinnamon
  • Pinch of salt
  • 1 medium apple, grated
  • 1 medium carrot, grated
  • ½ cup walnuts, chopped
  • 2 eggs
  • ⅓ cup plain Greek yogurt
  • ¼ cup olive oil
  • 2 tbsp monk fruit sweetener
  • 1 tsp vanilla extract
  • ¼ cup milk (any)

Crunchy Walnut Topping

  • 1/4 Cup walnuts, crushed
  • Sprinkle of cinnamon

Method

  1. Preheat an oven to 180°C. Line the muffin tray.
  2. In a bowl, mix wholemeal self-raising flour, cinnamon and salt.
  3. In another bowl whisk eggs, yogurt, milk, oil, sweetener and vanilla extract.
  4. Stir in the grated apple, carrot, and chopped walnuts.
  5. Fold the wet mixture into the dry ingredients. Stir until just combined.
  6. Spoon mixture into your muffin cups.
  7. Top with crushed walnuts and a sprinkle of cinnamon.
  8. Bake for 20-25 minutes until golden.
  9. Let them cool. Enjoy!
